Tender and juicy, no wild taste to speak of. Great in any application. At the top of my list lies the Green Winged Teal.
Unlike his cousin the Blue Wing, the Green Wing has absolutely no wild taste about him. I found that interesting. The Green Wing is such a fine morsel that I would put him up against a tender filet of beef. Farm raised mallards are available on a limited basis. The Mallard is the breed from which all domestic ducks, except the Muscovy, are descended. It is smaller and tougher than the Pekin. While the breed has very little fat, it can taste greasy and gamey.

The meat can be stringy and chewy, so the breed is primarily raised for its liver for foie gras; and for its breast, which shows well when cooked rare. What type of ducks do we eat?
